(not quite Chipolte) Burrito Bowls


The northern suburbs of Atlanta really had me spoiled food wise. I didn't realize just how much I'd be giving up when I moved to the middle of nowhere Missouri and how far I'd have to go to get what I want. Chick-fil-a is about a 20 min drive, and Chipolte is about a 30 min drive. AND THAT IS JUST NOT ACCEPTABLE! So, I learned how to make my own version of a Burrito Bowl at home.


Ingredients:
3-5 Chicken breast tenders
1/2 Can corn
1/2 Can black beans
1/2 Cup of shredded cheese
1 Cup shredded lettuce
1 Package Ready Rice (whole grain)
Soft flour/corn tortillas optional

Serves: 2

Step 1: Cook your chicken tenders. I use our Foreman Grill. Spice to taste.

Step 2: Heat corn and black beans on stovetop or in the microwave if your lazy like me.

Step 3: Cook rice according to package directions.

Step 4: While the corn and beans are cooking, cut the chicken into bite sized pieces.

Step 5 (Optional): Warm a tortilla in the microwave and place it in the bottom of a bowl.

Step 6: Start your bowl with 1 cup of rice as the base.

Step 7: Add about 1/2 the chicken pieces.

Step 8: Layer on about a 1/4 cup of the shredded cheese.

Step 9: Spoon about 1/4 cup each of corn and beans.

Step 10: Top it off with a 1/2 cup (or more) of shredded lettuce.

You can also add salsa, tomatoes, peppers, onions, or avocado. Whatever floats your boat! Sometimes we get some white queso, leave off the lettuce, exchange the tortilla for chips, and have nachos!
It's not quite as delicious as Chipolte, but it will definitely work for me.

    1. 30 mins is not THAT far, but it is when you just wanna run out and get some food. Which totally sucks.
